Very Easy And Tasty – Apricots (Tinned) in a Caramel Cream Sauce.

Serves: 1. Prep and serve approx. 20 minutes (can be made in advance and reheated).
INGREDIENTS:
- 4 apricot halves – (tinned and strained)
- 60ml single cream
- 3 tsp. bottled caramel syrup (the type used for coffee)
- 1 tsp. butter
- ¼ tsp vanilla essence
METHOD:
- On medium heat, melt the butter, then add the caramel syrup, vanilla essence and apricots (but not the apricot juice).
- Stir the apricots for 3-4 minutes till they become hot.
- Add the cream and continue to heat, stirring to avoid burning, for around 4 minutes,
- SERVE HOT, but this dish can be left and reheated.
