Green Beans with Aromatic Almonds

Serves: 1. Prep Cook 10–15 mins.
INGREDIENTS:
- 70-80g fresh green beans (you can also use frozen ones)
- 2 tsp olive oil
- 1 tsp lemon juice
- 2 tsp chopped shallot
- 1–2 tsp slivered almonds (the amount depends on your preference)
- salt
- ground black pepper
METHOD:
- Blanch the green beans in salted, boiling water for about 3-4 minutes, until bright green and tender-crisp.
- Drain and rinse in cold water.
- In a dry frying pan (no oil or water added), toast the almonds over medium heat, stirring until fragrant and golden. Remove from the pan and set aside.
- Add the olive oil to the pan. Add the chopped shallot and salt and pepper to taste.
- Cook, stirring, until the shallot is softened and fragrant. Add the lemon juice and continue cooking for 3-4 minutes.
- Add the green beans back into the pan.
- Continue cooking until beans are heated through.
- Place in a serving dish and top with toasted almonds.
