Beef Soba Noodles

Serves: 1. Prep & cook 25 mins.
INGREDIENTS:
- 60-70g soba noodles
- 50–60 g minced beef (needs to be very lean–no gristle)
- 3 pak choy leaves
- 2 spring onions
- 50g carrot
- 2 small mushrooms
- vegetable or groundnut oil for frying
- ½ tsp sesame seeds (toasted) to scatter on top
Sauce:
- 3 tsp soy sauce
- 3 tsp mirin
- 2 tsp oyster sauce
- ½ tsp garlic paste
- ½-1 tsp chilli paste (optional)
METHOD:
- Prepare the soba noodles following packet directions. Refresh under cold running water. Drain well.
- Mix the five sauce ingredients–this can be done in advance.
- Finely slice the carrot, mushroom and spring onion.
- Chop the pak choy leaves.
- Heat 1 tsp of the oil in a wok/frying pan over medium-high heat. Stir-fry beef until browned. Transfer to a plate.
- Heat another 2 tsp of oil in the pan. Add spring onion, carrot and mushroom and stir-fry for 3 mins.
- Add the chopped pak choy and stir-fry for 1 min.
- Return beef, noodles and sauce to the pan, then stir fry for 2 mins.
- Put into a serving bowl and sprinkle with sesame seeds.
