Apple in Caramel Sauce

Serves: 1. Prep & cook time: 20 minutes.
Best served at room temperature.
INGREDIENTS:
- 1 medium eating apple.
- 20g butter (pref. unsalted)
- 20g granulated sugar
- 60g granulated sugar
- 50ml condensed milk
- 2 tbsp brandy (optional)
METHOD:
- Wash and peel the apple.
- Cut the apple into 8 equal wedges and remove the core.
- Melt the butter in a shallow saucepan or frying pan over low-medium heat.
- Add 20 g of granulated sugar and cook until caramelised to a dark brown (be careful not to let it burn).
- Add the apple and quickly stir to coat with the caramel sauce.
- Add the additional 60 g of granulated sugar (for sweetening) and allow it to coat the apple as it melts (you can carefully turn the apple slices).
- When the apple starts to become translucent, add the condensed milk and the optional brandy.
- Reduce the heat to low and simmer for 5 minutes.
- Once the apple is softened, transfer to a plate & pour the sauce over the apples.
