Brandy (or sherry) Chocolate Balls – No Bake

Makes 12. Prep: 2-3 hours (need time for mix to set).
INGREDIENTS:
- 8 sponge-finger biscuits
- 25 g castor sugar
- 50 g plain chocolate
- 1.5 tbsp single cream
- 1 tbsp brandy or sherry
- Suitable coverings: Castor sugar, drinking chocolate, food-grade sparkle dust.
- Petite four cases
METHOD:
- Finely Crush the biscuits (I put them in a small plastic bag and hit it with a rolling pin).
- Break up the chocolate, put the pieces in a bowl and set it over a pan of simmering water.
- Stir occasionally until the chocolate mix has melted.
- Remove the bowl from the heat, then stir in the cream and sugar.
- Add the crushed biscuits and brandy (or sherry) and mix in well (no need to beat the mix).
- Leave the mixture to become stiff.
- Shaped into small balls, then roll in castor sugar, drinking chocolate or food-grade sparkle dust (e.g., Rainbow Dust Sparkle Spray).
- Put in petit four cases in a lidded container and leave them to mature for at least 24 hours.
