Milk Jelly with Matcha Green Tea Sauce & Fruit Topping

Serves: 2-3. Prep: 20 mins. plus chilling time.
INGREDIENTS:
The Jelly
- 3 sheets of gelatine
- Cold water to soak the gelatine in
- 430ml milk (I used whole cow’s milk, but you can use others, such as soy)
- 70g condensed milk
- 1 tsp matcha tea powder
The Sauce & Topping
- 1 tsp matcha tea powder
- 2 tbsp sugar
- 2 tbsp boiling water
- Fruit of choice (I prefer blackberries)
METHOD:
- Put the gelatine in cold water to soak.
- Soften the sheets by leaving them to soak for around 5 minutes (check the gelatine packet for instructions).
- In a bowl, combine the milk, condensed milk and matcha tea, and mix thoroughly.
- Pour the milk mix into a saucepan.
- Squeeze the gelatine leaves to get rid of excess water and add to the milk mix.
- Heat the pan contents on LOW heat and keep stirring till the gelatine dissolves. DO NOT allow the mix to boil as this will stop the jelly setting.
- Once the gelatine has dissolved, pour it into serving dishes/glasses. Leave room at the top to add the sauce & fruit.
- Leave in the fridge to chill and set.
