Spicy Paneer Slices In Crispy Panko

Serves: 1. Prep and Cook 30 mins.
*** Can be deep-fried or pan-fried.
INGREDIENTS:
- 3-4 tbsp plain flour
- 5-6 tbsp panko breadcrumbs
- 1 egg
- 100g paneer, sliced into rectangles
- vegetable oil, for frying (around 3cm of vegetable oil in a frying pan)
Spice mix:
- 1 tsp coriander powder (or garam masala)
- 1 tsp cumin powder (or garam masala)
- 1/4 tsp turmeric
- Pinch of salt
- Pinch cayenne or chilli powder (optional)
METHOD:
- In a small bowl or cup, mix the spices.
- Put the paneer slices on a plate and sprinkle with the spice mix, then leave for around 15 minutes.
- Beat the egg.
- Put the flour, egg and panko in separate shallow bowls.
- Dredge the paneer slices in the flour, dip into the egg, then gently coat in the panko, ensuring all sides have been covered.
- Heat the oil. If using a frying pan, heat around 3cm of vegetable oil in the pan.
- When the oil is hot enough (drop in a crumb of panko to test it–it should sizzle), place the paneer in the oil and fry for 3-4 mins till golden brown. NOTE: if using a frying pan, flip the panko over gently at least once.
- HINT: when taking the slices out of the pan, put on a piece of kitchen towel first, to get rid of excess grease.
- Serve with a favourite chutney.
